Anything by Gierach
Seth Norman's "Meanderings of a Fly Fisherman" is probably the single best IMO
Scott Waldie's 'Travers Corner' trio
Mallory Burton - 'Reading The Water'
'Trout Madness' by Robert Traver

Okay, how about Gierach's "Death, Taxes and Leaky Waders" ?
(Actually that's cheating, 'cause it's a compendium of material from his first six books!)
